I've only done the Gulf Stream trips and they're a blast, especially

if you can catch the fall dolphin run. It's a flurry of activity if you catch up to a decent sized school. Otherwise you're probably trolling for yellow or black fin tuna, which is really fun to catch, but there is down time in between each fish.
